Taking Care of Your Chocolates

Chocolate melts. We all know that. Let chocolate get too warm and it quickly becomes a sticky, messy sludge, and this is not the fate we want for our beautiful handmade chocolates. The most obvious solution would be to keep your chocolates in the fridge. However, this is a huge mistake! NEVER put chocolates in the fridge. It ruins the flavour and leaves a nasty, white, powdery bloom on the surface of the chocolate.

The best way to store chocolate is in a cool dry place. A cupboard or a draw is perfectly ok. We store our own chocolates in purpose built draws. Remember that chocolate can absorb flavours from nearby items so avoid keeping chocolate near anything with a strong flavour or aroma.
